Mexican Casserole






Mexican Casserole
1 lb ground turkey
1 cup frozen corn
(1.25 oz) packet dry taco seasoning mix
16oz fat free refried beans
10oz enchilada sauce
8 small flour tortillas
2 cups Kraft Mexican Four cheeses shredded
½ cup cilantro chopped

Preheat oven at 350
In a frying pan on medium high heat sprayed with cooking spray cook ground turkey 5 to 6 minutes use a spatula to break the meat while cooking. Add cup of frozen corn and dry taco seasoning toss together well and cook an additional 2 minutes until corn is thawed mix in cilantro remove from heat and set aside.
In a 8 x 10 casserole dish sprayed with cooking spray coat bottom with 2(oz) of enchilada sauce top with two tortillas side by side spread 1/3 of the turkey mixture and add ½ cup of the cheese. Repeat two more layers and ending with tortilla, 2 (oz) enchilada sauce and the remaining cheese.
Cover with foil and bake for 20 minutes remove foil and cook additional 10 minutes. Let it sit for 5 minutes and serve.

Garden Fresh Rotini pasta salad!



Move over regular macaroni salad!
1/2 lbs rotini pasta cooked
2 medium tomatoes chopped
1 small cucumber chopped
1 medium green bell pepper chopped
1/2 Black olives
2 tablespoon cilantro chopped
1/2 cup Roasted pepper italian dressing
Mix well and chill for an hour! Perfect side for grilled food! Enjoy!

My way left over chicken salad!

left over roasted chicken chopped
green onions
hard boiled eggs
parsley
dry cranberries
chopped walnuts
Miracle whip or mayonaise
salt, cayene pepper to taste.

Mix all together and serve over bed of lettuce! Bon Appetit!
