SMOKED POTATO SALAD

If you don't have a smoker you go online and they tell you how to make a disposable one with aluminum pans and foil!

Prep time: 5 min cook time: 30 min Serves: 8

3 lbs small potatoes red or gold
1 tablespoon sea salt
2 tablespoon olive oil

2 tablespoon Dijon mustard
2 tablespoon red wine vinegar
4 green onions chopped fine
½ cup fresh parsley chopped
3 oz can slice black olives drained
½ cup fat free feta cheese crumbled
Prepare smoker as directed or follow my instructions.
Wash potatoes and cut if too big into 1 ½ inch cubes. In a bowl toss potatoes with olive oil, sea salt and black Pepper until well coated. Place potatoes on smoker rack close lid and take to the grill and place on side burner on medium high heat leave to cook for 30 minutes.
While potatoes are smoking. To a small mixing bowl add Dijon mustard, red wine vinegar, celery seeds, green onion and fresh parsley mix until well incorporated.
