My pizza with fresh veggies and herbs Ummmmmmmmmm

Fresh fish anyone? I love sharing my fishing adventures and my love for cooking any chance I get!

Fish cakes instead of Crab cakes Yes! I always have fresh fish on hand so why not!!


I am a crab cake lover but I also love fresh fish so why not a fancy fish cake with a creamy Hollandaise sauce with a twist adding Chives & Onions Philadelphia cream cheese makes the dish!!!!!! Your guests will be impress these are made with fish and not crab!! Prep time: 15 minutes |Cook time: 12 minutes |Total time: 27 minutes |Servings: 6•3/4 pound(s) of Tilapia filet or any other white fish chopped very small ( I use gray snapper)
•1/4 cup(s) of celery chopped fine
•1 egg
•1 tbsp. of yellow mustard
•1 1/4 tbsp. of crushed Ritz crackers
•2 tbsp. of chopped cilantro
•2 cup(s) of canola oil
•1 pack Knorr Hollandaise sauce mix
•1 cup(s) of milk
•4 ounce(s) of Chives & Onion Philadelphia cream cheese
Steps
1.• 1. In a bowl mix your chopped fish, celery, egg, mustard, cilantro and crushed crackers season with salt & pepper mix well. In a deep frying pan add oil and heat to 375 degrees.
2.With a cookie scoop, scoop mixture and place in hand and press into a patty add to oil repeat until all mixture is gone will make 12 patties. Cook approximately 3 minutes on each side until starts to turn a golden color; this is very fast you may have to fry six at a time you do not want to crowd your frying pan. Once you remove the fish cakes from oil place on a plate lined with paper towel to drain excess oil.
3.Next in a small sauce pan add Knorr Hollandaise sauce Packet and milk on medium heat whisk until thicken you will not add butter but once the sauce has thicken you will then add cream cheese until all melted
4.Plate 3 fish cakes per plate and top with Hollandaise sauce. You may garnish the plates with cilantro and lemon wedges!

My Elegant Shrimp Bites, The perfect appetizer!


The shrimp lover that I am couldn't resist creating these delicious and creamy with the crisp fillo dough shrimp cups. This combo is just perfect and elegant!! Prep time: 6 minutes |Total time: 6 minutes |Servings: 6•1 pack Athens Mini Fillo shells
•4 ounce(s) of Philadelphia whipped cream cheese
•1/8 cup(s) of cup of mayonnaise
•4 ounce(s) of can Bumble Bee tiny shrimp drained
•1/4 tsp. of garlic salt
•4 drops of hot sauce
Steps
1.In a bowl add all ingredients except for reserving 1 tbs of chopped green onions for garnish Spoon filing equally into mini fillo shells this recipes make 15 appetizers.

Got to love fresh fish and seafood new ideas





You all know me i go fishing pretty much every chance i get and well here are a few plates and ideas to prepare your fish

The best fish breading ever! 1 part crushed Ritz Crackers, 1 part dry instant potatoes, 1 part Italian bread crumbs.
Fry in Canola oil at 375 degrees and voila!!
Serve with a spinach salad with a twist for a dressing! 1/2 cup rasberry vinagrette, 3 tbs of Dijon mustard and it doesn get any easier then this!! Simplicity at it's best!!!!!!!
