1 lime (zest and juice) 1 tablespoon olive oil ¼ teaspoon blackened seasoning 1 fresh garlic clove (minced) 1 tablespoon fresh cilantro (chopped fine) In a bowl zest and juice add remaining ingredients whisk all together pour over fish marinate in fridge for 30 minutes. This is enough for one pound of fish filet.
If you don't have a smoker you go online and they tell you how to make a disposable one with aluminum pans and foil!
Prep time: 5 min cook time: 30 min Serves: 8
3 lbs small potatoes red or gold 1 tablespoon sea salt 2 tablespoon olive oil 1 teaspoon fresh ground black pepper 2 tablespoon Dijon mustard 2 tablespoon red wine vinegar 4 green onions chopped fine ½ cup fresh parsley chopped 3 oz can slice black olives drained ½ cup fat free feta cheese crumbled Prepare smoker as directed or follow my instructions. Wash potatoes and cut if too big into 1 ½ inch cubes. In a bowl toss potatoes with olive oil, sea salt and black Pepper until well coated. Place potatoes on smoker rack close lid and take to the grill and place on side burner on medium high heat leave to cook for 30 minutes. While potatoes are smoking. To a small mixing bowl add Dijon mustard, red wine vinegar, celery seeds, green onion and fresh parsley mix until well incorporated. Place your cooked potatoes still warm in a large mixing bowl and add dressing, black olives and feta cheese gently mix until well coated. Serve while still warm. Bon Appétit!
Prep: 5 minutes Cook: 10 min Serve: 4 4 steak rolls 8oz imitation crab meat 1 celery stalk 1 green onion 2 tablespoon fresh parsley ½ lime 1/4 cup mayonnaise ¼ cup shredded sharp cheddar cheese Pinch cayenne pepper and sea salt Preheat oven at 400. Roughly chop crab meat leaving chunks and place in a mixing bowl. Chop celery, onion and parsley and add to the crab. Juice the lime over the crab mixture and add all remaining ingredients and mix well. Cut the rolls length wise but not all the way through stuff with crab mixture and place on a line cookie sheet and bake 15 minutes. Serve warm.
